What We Are Eating: Week Seven

  • Research  how to make homemade kefir.  I did not do this because I have registered for the GNOWFGLINS Fundamentals eCourse and there is a lesson included on how to make kefir. 
    Good Finds

    Week 7 Goals  
    • No white sugar.  We all had too much Valentine's Day chocolate this weekend!
    • Work on decreasing the amount of juice Wes drinks.
    • Begin to develop a Menu Planner (master list of dinner ideas).
    Breakfast
    Egg in a Hole (heart shaped) and Bacon
    WW Bagels and Cream Cheese
    Granola and Yogurt
    Fruit and Kefir
    Corn Muffins (left over from dinner on Tuesday)


    Dinner 
    Sunday - Ribs, Red Rice, and Coleslaw
    Monday - Black Bean Burritos
    Tuesday - Lima Bean Soup and Corn Muffins
    Wednesday - Shrimp Scampi and Roasted Broccoli with Parmesan
    Thursday - Beef and Bean Chili
    Friday - Homemade Pizza - Pesto, Tomato, Black Olive, and Feta/Double Cheese

    We do sushi night once a week. My little one loves avocado rolls. You could make them with whatever veggies your little ones like. We use soy paper so it is easier for her to eat.

    Ladybug ~ My husband, oldest daughter, and I love sushi. However, I have never attempted to make my own. I am a little intimidated.

    Tara,
    Believe me... if I can make sushi ANYONE can and it makes for a fun dinner. We do the sushi rice in the rice cooker. Mix approx 5 TB of rice wine vinegar with 1 tsp of sugar, 1/2 tsp of salt. When the rice is cooked mix in the rice vinegar mixture and spread rice out on cookie pan to cool. The rest is all prep work (cutting up veggies). Everyone rolls their own... even my 3 year old. You can actually roll without the bamboo mats but they are handy. Just be sure to cover bamboo with cling wrap. It is one of our families favorite meals.
