A Dinner Enjoyed by All

 My two youngest children are picky eaters.  This makes it quite difficult to find recipes that everyone enjoys.  I found a winner tonight, though.  Score one for Mom!

Here is what I made..

Bacon Beef Chili

3-5 slices of bacon
1 small onion
1/2 green pepper
1 pound of ground beef
1 packet of Simply Organic Chili Seasoning
1 bottle of beer (optional)
1 can of tomato sauce
1 can of diced tomatoes
1 large can of dark kidney beans
cheddar cheese
sour cream

Cut the bacon into small pieces and fry.  Remove from pan and set aside.  Add the diced onion and green pepper to the bacon grease and cook until tender.  Add the ground beef and brown.  Pour in the can of tomato sauce, the can of diced tomatoes, the can of kidney beans (undrained), and about half of the beer.  Next, add the packet of chili seasoning.  Allow to simmer for at least 20 minutes.  Add the bacon pieces back in and stir.  Top with cheddar cheese and sour cream.  Scallions would be yummy, too.
*If you do not drink beer, you can use an additional 1/2 can of tomato sauce.
